Visit Lake Charles will bring a taste of Louisiana’s Playground to Chicago during Taste Louisiana on Wednesday, Nov. 4, 2026. Kathryn Shea Duncan, senior director of social media/communications at Visit Lake Charles, and Chef Lyle Broussard of Crying Eagle Brewing – Lakefront will represent Southwest Louisiana.
Organized by the Louisiana Travel Association, Taste Louisiana brings together chefs and destination partners from across the state to introduce guests to Louisiana’s food, culture, and travel experiences. Alongside culinary tastings, attendees can learn about the communities behind the dishes.
Broussard will serve blackened alligator tacos. He chose the dish to highlight an ingredient rooted in the region’s food culture in a familiar, approachable format. The blackening adds bold Louisiana flavor, while the taco offers a new spin on tradition.
“People often expect everything to be very spicy, but they’re surprised by how much flavor comes from the whole mix of ingredients and techniques,” said Broussard. “One reaction I enjoy is when someone tries alligator expecting it to taste strong or gamey, then realizes how mild it is and how well it takes on the seasoning. That moment opens the door to talking about the ingredients and traditions we grew up with here.”
Duncan will connect with attendees to highlight the restaurants, attractions, and experiences that make Southwest Louisiana a distinctive culinary destination. The organization’s participation supports its ongoing work to introduce Louisiana’s Playground to prospective travelers and turn interest in the region’s food and culture into future visitation.
“Food is one of the most personal ways we can introduce someone to Southwest Louisiana,” said Duncan. “Chef Lyle brings our region’s hospitality and personality to every plate. Taste Louisiana gives us an opportunity to share that experience in Chicago and encourage guests to come discover more of Louisiana’s Playground for themselves.”
From neighborhood favorites and boudin stops to waterfront dining and chef-driven menus, Southwest Louisiana offers visitors a variety of ways to experience its culture through food.
Taste Louisiana will feature 16 Louisiana chefs alongside Louisiana-inspired drinks, immersive experiences, and live music from Wayne Toups and David St. Romain. The event will be held at City Hall at Recess. Tickets are $75. For additional event details and to purchase tickets, visit Taste Louisiana’s website.
